1. Remove the stalk from the white cabbage and place the cabbage briefly in boiling water until the first leaves loosen. Repeat until all the cabbage leaves are loose. Mix the mincemeat with the rice, add water, salt, pepper, thyme and onion and mix together.

Sprinkle some of the bacon over the top and continue to layer until all the ingredients have been added. Finish with a layer of cabbage. Add salt and pepper to the last layer of cabbage and spread the knobs of butter over the top. Then add the meat stock.
