Filled Potato Waffles
Preparation time : 30 minutes
2 lbs potatoes
salt
1 pack bacon (16 oz)
2 cups flour
1 ½ tsp baking powder
1 cup milk
1 egg
2 bunches of fresh chives
3 tbsp butter
8 slices of cheddar cheese
Step by step
- Peel the potatoes, cube and cook for approx. 15 minutes in salted boiling water. While the potatoes are boiling, fry the bacon in a pan (without oil) until crispy. Wash the chives, shake dry and chop.
- Drain the potatoes and mash. Add the flour, baking powder, salt, milk and egg and combine. Mix the chives into the dough.
- Grease the waffle iron with butter. First fill the waffle iron with 2 tbsp batter, then layer with cheese and bacon and top with 1 tbsp dough. Bake util cooked through (for a few minutes depending on the waffle iron).
If preferred, it can be served with a warm cheese dip.
