Granola Berry Breakfast
3 tbsp pistachios
3 tbsp pumpkin seeds
3 tbsp pecans
3 tbsp chia seeds
3 tbsp flaxseeds
2-3 tbsp honey / agave syrup
4 tbsp flaked coconut
1/4 cups dates, chopped
2 1/3 cups frozen berries
4 cups plain yogurt
1 packet (o.32 oz) of vanilla sugar
Step by step
- Roughly chop pistachios, pumpkin seeds and pecans. Then toast the chia and flaxseeds along with the nuts in a dry pan (no oils or fats) and add the honey. Allow everything to caramelize for about 1 minute. Remove the pan from the stove and spread the seed and nut mixture over a baking sheet covered by baking parchment. Once it cools, break the granola into small pieces.
- Mix the dates and coconut flakes with the granola. Puree the frozen berries, yogurt and vanilla sugar in a blender. Serve together in a bowl.
- Feel free to add any other nuts to the granola that you happen to have on hand.
