The trio of kale, chickpeas and sweet potatoes are at the heart of this superfood-infused recipe, which is prepared in 30 minutes. Preheat the oven to 400°F. Drain chickpeas and mix with cumin and 3 tbsp. oil in a bowl. Season with salt and with pepper to taste.

Peel and cut sweet potato into ½" cubes and mix with 2 tbsp. oil in a bowl. Season with ¼ tsp.* salt and pepper to taste.

Place chickpeas and sweet potatoes side by side on a baking sheet lined with parchment paper and bake in the preheated oven for 22 minutes on the upper rack.

Wash orange in hot water, grate peel and squeeze out juice. In a bowl, mix orange juice with 1 tsp. orange zest, maple syrup, 1 tbsp. oil and 1 tbsp. white wine vinegar. Season with salt.

Remove chickpeas and sweet potatoes from oven. Place kale and sweet potatoes in a bowl and mix in the vinaigrette.

Arrange kale and sweet potatoes in a bowl and garnish with chickpeas.
