Dazzle your family and guests with this super simple salad. Poppy seeds and blueberries are brought together in this nutritious spinach salad that is topped with fresh mozzarella and a lemon vinaigrette for a perfect start to a meal, or a flavorful lunch.
Cut mozzarella into 1/4" thick slices. Wash lemon in hot water, zest peel and squeeze out juice.
Heat a pan without oil and toast poppy seeds on medium heat for 3 minutes, stirring occasionally. Then remove from pan and cool.
In a bowl, mix 1 tbsp. oil and 1 tsp. lemon zest and season with salt and pepper to taste. Add mozzarella and marinate.
In another bowl, mix poppy seeds, 1 tsp. lemon zest, 1 tbsp. lemon juice, honey, 2 tbsp. oil and 1 tbsp. white wine vinegar. Season with salt and pepper to taste.
Combine spinach, blueberries and two thirds of the lemon poppy seed dressing in a bowl and mix well.
Place blueberry and spinach salad on a flat plate, add marinated mozzarella on top and drizzle with remaining lemon poppy seed dressing.
