Whether you’re looking for a detox recipe, or you simply love the deep flavor of beets, you’ll enjoy this easy-to-prepare soup recipe.
Beets are a common ingredient used for a detox. This flavorful vegetable aids in helping your body to better balance hormones, cholesterol and energy levels. This beet soup will get you on the right track.
Peel carrots, quarter lengthwise and cut in ¼-inch cubes. Peel and finely chop spring onion and garlic.
Toast chia seeds in a pan for 3 minutes. Then remove and cool. Peel and halve red beets. Cut into ¼-inch cubes. TIP: We recommend wearing kitchen gloves for this step.
Heat 2 or 4 tbsp.* oil in a medium-sized pot and cook garlic and spring onion at medium heat for 1 minute. Add red beets and carrots and sauté for another 3 minutes.
Add 2 or 4 cups of water, bouillon cube, and thyme, bring to a boil, and simmer at medium heat for 15 minutes. In the meantime, mix cream cheese with 2 or 4 tbsp.* water, ¼ or ½ tsp.* salt, and pepper to taste in a bowl.
After 15 minutes, remove soup from heat and blend with a hand-held blender (or use a regular blender). Season with ¼ or ½ tsp.* salt and pepper to taste.
Serve this creamy red beet soup in round bowls. Garnish with cream cheese and chia seeds.
