    Vegan quinoa salad with colorful tomatoes and broccoli


    Serves 4

    1 ½ cups quinoa 1 cup vegetable broth 1 1/3 cup red cherry tomatoes 1 1/3 cup yellow cherry tomatoes 1 broccoli 2 sprigs of cilantro 3 tbsp cider vinegar 3 tbsp olive oil Salt Pepper


    1. Rinse quinoa in a strainer under cold water. Bring to a boil in vegetable broth, cook for about 10 minutes until firm. Loosen with a fork and let cool. 2. Wash broccoli, cut florets and then steam in a saucepan with strainer for about 5 minutes. 3. Wash and half tomatoes. 4. Wash cilantro and chop finley. 5. Mix vinegar with salt and pepper and whisk in olive oil. 6. Put all ingredients one by one in layers into a jar or a lunchbox and pour the vinaigrette over them. 7. Mix everything well again before eating. Bon Appetite!
