Gluten-free baking: banana bread

    Baking can be healthy and delicious – we’re sharing a recipe for banana bread without sugar, butter or flour. 

    Gluten free and no extra sugar 

    Banana bread is delicious and versatile. Ripe bananas are so sweet that there’s no need to add sugar. Instead of flour, we use flavorful ground nuts – making this recipe gluten-free and low in carbohydrates. It is seasoned with vanilla and cinnamon, with eggs providing a binder and protein.

    You can personalize this recipe with additional ingredients such as coca, berries or different types of nuts.   

    Recipe

    Ingredients:

    2 ripe bananas

    1/2 cup almonds (ground)

    1/2 cup grated coconut (ground) 

    handful of almonds or coconut flakes 

    3 eggs

    1 tbsp walnut oil 

    1 pinch of salt

    1 tsp cinnamon

    1 tsp vanilla

    1 tsp baking powder

    Preparation: 

    1. Peel bananas and crush them in a bowl with a fork. Add remaining ingredients and mix thoroughly until fully combined. A blender can also be used.

    2. Line a baking tin with parchment paper and pour in dough.

    3. Bake at 350° for 40-45 minutes. The bread can be enjoyed warm or cold.
