Easy Summer Recipe: Lentil Salad

During the summer, we want to relax and spend less time in the kitchen. This fresh lentil salad recipe is light and refreshing—and it cooks up faster in a pressure cooker, delivering a delicious and healthy lunch or dinner. This simple dish is great for hot days and perfect for picnics.

Lentils don’t need to be soaked for preparation in the pressure cooker which makes the process even faster. They can also be cooked dry in a fraction of the time. Lentils are a great base for all kinds of salads.Combine them with feta cheese, arugula and mint or berries and pomegranate seeds, and you have a tasty meal!

Recipe: Fruity Lentil Salad


1¼ cup (250 g) lentils

1 cup (100 g) grapes

1 cup (100 g) cherry tomatoes

1 headromaine lettuce

3 sprigs of mint

1/3 cup (50 g) hazelnuts

1/8 cup (20 g) parmesan cheese

2 tablespoons vinegar

2 tablespoons olive oil

dash of lemon juice

salt pepper


1. Wash the uncooked lentils and place in the pressure cooker with 3 cups (700 ml) of water. 2. Close the pressure cooker according to the instructions. On high heat, bring to pressure level indicator to level 2 (fast cooking). As soon as the yellow ring becomes visible, reduce the heat.When the green ring appears, cook for 10 more minutes. 3. While the lentils are cooking, wash and cut the grapes, cherry tomatoes, romaine lettuce and mint. 4. Chop the hazelnuts and briefly toast in a fry pan. 5. After 10 minutes, release the pressure in the cooker according to the instructions and open lid.Drain and discard the liquid. Place lentils in a bowl.Season the warm lentils with vinegar, oil, salt and pepper. 6. Combine remaining ingredients and top with parmesan cheese.
