Valentine's Day is the perfect holiday to celebrate happiness and toast love. And what’s better than a sparkling champagne cocktail? Champagne cocktail with blackberries and thyme Ingredients: 2/3 cup of blackberries 2/3 cup of sugar dash of lemon juice 3 teaspoons of water champagne sprigs of thyme Preparation: 1. First, make blackberry syrup. Wash and dry fruit, and bring to a boil with 2 teaspoons of water. Then, puree and pass through a sieve. 2. Next, place sugar, dash of lemon juice, 1 teaspoon of water pureed blackberries in a pot. Bring to a boil until the consistency is similar to syrup. Remove from heat, cool and chill. 4. Add 2 tablespoons of chilled blackberry syrup to each glass and top up with champagne. 5. Garnish with a sprig of thyme and whole blackberries. Tip: Frozen blackberries can also be used.
